Since 2016, two consecutive chefs from Toronto have directed the world-famous fermentation lab at René Redzepi’s restaurant, Noma, in Copenhagen. Both credit the upbringing in their hometown with expanding their palate for pickles. Their work is putting Canada on the global map.
